Healthy Lunchboxes

I can’t believe we are back to school in three weeks!  This summer was jammed packed with fun and literally flew by for us.  So if you know anything about me, you know that I’m more than a little pre-occupied with making sure my children are nourished for the school day which means a good breakfast and a packed (most of the time) lunch.

One of the things that was a challenge is when R started noticing that many other kids (whether buying or packing) were getting treats every day while she munched on edamame and quinoa.  So when she came to me and made a direct request for chocolate pudding, I found myself scrambling for a solution that would make both of us happy.  I came up with a great chocolate pudding recipes that she loved and I felt good about and now I have a Healthy Rice Krispy Treat that I can’t wait to include next year.  In my opinion, this is better than the original.  I’ll share more of my lunchbox strategies in the coming weeks but in the meantime, it’s time to get your lunchbox and school supplies.

    Phyllis, that lunch looks so yummy. I would love to eat it. It is a constant battle in our house for my girls to eat better – I give them fruits and veggies and they will just turn away from the table and say I’m not hungry and I don’t want dessert. My oldest is eating better than she used to so I’m hoping the little one catches up.
